28 Feb Winter Warmer
It’s a bit of a shock to the system when the weather changes from cold to even colder! When the weather is like this we all just want to stay indoors. We have the perfect reason for you to stay home, to make soup!
A lovely warm bowl of soup is the ideal comfort food when you’re sheltering from the cold so why not try our simple recipe below which is also packed with vitamin C, much needed at this time of year.
What you’ll need;
85g dried red lentils
2 carrots, quartered lengthways then diced
3 sticks celery, sliced
2 small leeks, sliced
2 tbsp tomato purée
1 tbsp fresh thyme leaves
3 large garlic cloves, chopped
1 tbsp vegetable bouillon powder
1 heaped tsp ground coriander
Method
- Put lentils, vegetables, tomato purée, thyme, garlic, bouillon powder and coriander into a large pan. Add over 1½ litres of boiling water and stir well. Cover simmer for 30 mins until the vegetables and lentils are tender.
- Your soup is ready! It was that simple! Serve in bowls!
