We can’t provide conflict resolution for those inevitable family disagreements around the table on Christmas day but we can help you make sure everyone is happy with what’s on their plate and this year we’re sharing with you our recipe for The Best Turkey Gravy.
So look no further than our recipe below to find the key to satisfying your guests stomachs this Christmas.
What you’ll need;
Roasting pan juices
1 carrot, chopped
1 onion, chopped
1 celery stick, chopped
1 garlic clove
10g of thyme
500ml of red wine
1000ml of chicken stock
500ml of veal stock
50g of butter
Salt
Pepper
What you’ll need to do;
1. To make the gravy, pour all excess fat from the roasting tray into a large pan, then add the carrots, celery, onion, garlic and thyme and cook until caramelised. Add the red wine, reduce, then add chicken and veal stock and reduce by 2/3
2. Pass through a fine sieve into a clean pan then place back on the stove. Bring to the boil, correct the seasoning and whisk the butter into the gravy. Serve in a jug alongside your roast dinner
