Pink Lemonade

It’s June and summer is finally here and no doubt all this great sunny weather we’ve been having has helped the produce which is coming into season!

A whole host of berries are now in season including blueberries, loganberries, raspberries, strawberries and tayberries.

This week we’ll be sharing with you two recipes to show you how you can enjoy the berries of this season starting with raspberries. There’s no better way to enjoy this berry in the sun than by making some thirst quenching pink lemonade and here’s all you’ll need and the simple steps you’ll need to take!

What you’ll need;

300g caster sugar

1½ lemons, sliced

1 orange, sliced

3 x 170g/6oz punnets raspberries

350ml cold water

ice and fresh mint, to serve

What you’ll need to do;

Put all ingredients in a large saucepan and add 350ml cold water. Bring to the boil, stirring often, then leave to cool. Once cooled, pour through a sieve, pressing down with a spoon to extract all the juices. Store the syrup in the fridge, it can be kept for up to 1 week. To make your lemonade, add a little syrup to a glass and top up with sparkling or still water, then add as much ice and mint as you wish!

There it is! So easy but it will leave you with something to really enjoy the best of this season’s produce and weather. You could even use some of the syrup for a more adventurous recipe!
