St Patrick’s Day Treat

St Patrick’s Day Treat

St Patricks Day cupcakes

In January we celebrated the New Year, in February we celebrated Valentine’s and Pancake Day. Now it’s March and time for a real party as it’s time to celebrate St Patrick’s Day! If you’re thinking of having a get together on 17th March then we’ve got the ideal recipe for you to serve to your guests.

We’re sure you’ve all heard of the delicious red velvet cake, well this St Patrick’s day we’re replacing it with the black velvet cake! That’s right, a dessert with the addition of the infamous Irish drink, Guiness.

What You’ll Need:

100g softened butter

175g light brown soft sugar

1 egg

100g self-raising flour

50g ground almonds

½ tsp bicarbonate of soda

5 tbsp cocoa, plus a little extra for decorating

150ml Guinness

What You’ll Need To Do:

  • Pre heat the oven to 180C/160C fan/gas 4. Prepare cupcake cases and place on a cupcake baking tray.
  • Get the butter, sugar, egg, flour, ground almonds, bicarbonate, cocoa and Guinness, put in a mixing bowl together and begin to beat until the mixture is smooth with no lumps.
  • Divide the mixture between the cupcake cases and then they’re ready for the oven! Place in the oven for around 20 to 25minutes, you will know they’re ready when you can see they’ve risen and you can check them by poking them with a skewer, if it’s completely clean when you remove it, you’re done.

You can make you’re cakes extra special with the addition of some cream! To make the cream you’ll need, 200ml double cream, 25g icing sugar and why not add a splash of Bailey’s, to make it Irish and really keep with the theme!

Here’s what you’ll need to do to make your (Irish) cream!

Pop the cream, icing sugar and if you’re adding it, the Bailey’s in a bowl and whisk together until the mixture becomes thick. That’s it! You have you’re Irish cream to add to your Guinness cakes!
