03 Oct Sprouts O’Clock
In our last blog post we shared the perfect dish to start Christmas Day and today we will be talking about a vegetable that we associate with this season but you can enjoy now! It’s the loved by some, hated by others, Brussels sprouts!
It’s October and sprouts have just come into season so if you love it don’t wait until December to get your hands on some and try our recipe for smashed sprouts. This is a great alternative to mash potato or you could use it instead of avocado if you’re sick of slicing into hard unripe ones! The best part is this is super easy to make and only takes one step.
What you’ll need;
600g Brussels sprout
50g butter
100ml double cream
half nutmeg, grated
200g pack vacuum-packed chestnut
What you’ll need to do;
Halve the sprouts and put in a large pan, cover with boiling water and cook for 8-10 mins and once tender drain, and leave to steam-dry for a couple of minutes. Pop them back into the pan and get a potato masher to ‘smash’ the sprouts. Next get the butter, cream, half the nutmeg grate, add all and season well, cook for 2 minutes. Roughly chop the chestnuts and mix in half and sprinkle the other half over the smashed sprouts when serving.
