Make Your November Celebrations Vegan This World Vegan Month

Autumn celebrations are upon us! After all the fun of Halloween dress up and sweet treats November brings with it more celebrations including Guy Fawkes Night and it is World Vegan Month! To marry the two, we’re bringing you a vegan dish which will be great to enjoy on a night of firework celebrations but first we thought we’d discuss a bit more what this vegan thing is all about!

The celebration of World Vegan Month is a time to bring awareness to this lifestyle, whether you call it vegan or plant based. People are often scared off by the idea of ‘going vegan’ as they think it will be expensive, there won’t be many options for them and it won’t taste great! World Vegan Month is a time to try and prove all these points are wrong by showing people how affordable, accessible and delicious vegan food can be.

World Vegan Month aims to educate on the benefits adopting a vegan diet can have and we’ve highlighted three of these below.

  1. Better for animals. If you’re a fan of furry friends, you may take comfort in the fact that no animals were harmed in the making of your vegan dish. Not only will no animals be killed but you won’t be contributing to animals being kept in unfair conditions such as battery hens.
  2. Cutting or stopping your intake of animal products will reduce your carbon footprint this is because meat and dairy production is responsible for 60 per cent of agriculture’s greenhouse gas emission
  3. Your health, switching to plant based can have a great positive impact on your health. Eating vegan has been credited as a great way to lose weight, it can also help prevent developing diabetes or cancer.

So a switch to a plant based diet will help animals the planet and yourself, some pretty good reasons to consider taking it up!

We’re sharing with you a pumpkin soup dish which is ideal considering Halloween has just passed and there should be plenty of pumpkins still around. The clocks have just changed also which means darker nights when it will be great to get home and cuddle up with this comforting soup especially with this dishes warming chilli. A soup dish will also be welcomed after a cold night out staring up into the sky at fireworks on bonfire night!

What You’ll Need:

1 medium pumpkin

1 large white onion

1 inch piece of root ginger

2 garlic cloves finely

½ Scotch bonnet chilli

4–5 sprigs of thyme

400ml coconut milk

freshly ground sea salt and black pepper

What You’ll Need To Do:

  1. Cut your pumpkin flesh into around 1 inch cubes, peeling the skin and removing the seeds as you do so.
  2. Chop your onion and finely chop ginger, garlic and chilli removing the seeds then along with the pumpkin cubes add to a pan. Take the thyme leaves and add also. Add 400ml of water and bring to the boil, cook until the pumpkin has completely softened.
  3. Next add the coconut milk to the mixture and season with salt, reduce the heat and allow to simmer for up to 10 minutes.
