27 Sep First Steps to Christmas
It may only be September but Christmas will be here before we know it! Get ahead of the game as we’ll be sharing some Christmas dish ideas in the run up and where better to start that Christmas Brunch! Smoked salmon is always a favourite for Christmas Brunch so why not consider treating the family to our recipe pairing it with eggs benedict.
What you’ll need:
2 tsp lemon juice
white wine vinegar
7 eggs
125g unsalted butter, and a little for spreading
2 English muffins
8 slices smoked salmon
chives
What you’ll need to do;
- Start with the Hollandaise sauce by putting the lemon juice and 2 teaspoons vinegar in a small bowl, then take 3 of the eggs and add their yolks, whisk with a balloon whisk until light and frothy. Place the bowl over a pan of simmering water and whisk until mixture thickens. Dice the unsalted butter and add gradually, whisk constantly until thick – if it looks like it might be splitting, then whisk off the heat for a few minutes. Season and keep warm.
- Next poach the eggs. Bring a large pan of water to the boil and add 2 tablespoons vinegar. Lower the heat so that the water is simmering gently. Stir the water so you have a slight whirlpool, then slide in each of the 4 remaining eggs one by one. Cook each for about 4 mins, then remove with a slotted spoon.
- Toast and butter the muffins then add a couple of slices of salmon to each half. Top each with an egg, spoon over some Hollandaise and garnish with chopped chives.
There you go, in 3 simple steps you have a delicious dish to enjoy for brunch on Christmas Day.
