07 Oct Don’t Let Your Pumpkin Go to Waste This Halloween
It’s almost that time of year again, the clocks have changed, the nights are darker, you will soon have uninvited guests knocking on your door asking ‘trick or treat?’ Of course we are talking about Halloween! No doubt you have already start to see huge orange pumpkins in the supermarkets. This year don’t let all that great flesh go to waste! As well as being great Halloween decorations, pumpkins are also really tasty and here’s what we suggest you do with yours this year.
Pumpkin Curry
When you make your spooky lantern this year why not also carve out some pumpkin flesh and set it aside to make some delicious curry! You could even use the flesh after you’ve used your pumpkin as a lantern. If you have a candle inside your pumpkin and this burns the flesh it will add a lovely smoky flavour!
This recipe is great if you’re hosting a Halloween party as it should please all your guests as it’s vegan and gluten free!
So without further or do, here’s what you’ll need and what you’ll need to do.
What You’ll Need:
1 tablespoon of sunflower oil
3 tablespoons of vegetarian Thai yellow curry paste
2 onions
3 large stalks lemongrass
6 cardamom pods
1 tbsp mustard seed
1 kilogram of pumpkin flesh
250 millilitres vegetable stock
400 millilitres coconut milk
400 grams of chickpeas
2 limes
Large handful mint leaves
What You’ll Need To Do:
- First prepare your onions by finely chopping them, crush your lemongrass in a pestle and mortar and drain and rinse your chickpeas.
- Heat the oil in a pan and add the curry paste with the onions, lemongrass, cardamom and mustard seed don’t overheat but fry gently until you can smell the mixture.
- Add your pumpkin. You may want to chop the pumpkin into bite size pieces depending on how you’ve removed it when making the lantern.
- Next add the stock and coconut milk, bring to a simmer, then add the chickpeas and cook until the pumpkin becomes soft.
- Add the last few touches by squeezing the lime over the curry to release it’d juice and garnish with mint leaves when serving. Bon Appetit!
