19 Dec Christmas Cranberry Veggie Delight!
We shared with you our top tips on prepping for veggie diners this Christmas and now we’re sharing with you the perfect addition to their roast, a Cranberry Lentil bake. This dish is great as not only can you serve it to vegetarian guest at your dinner party, but vegan guests also as it contains no animal products and the inclusion of cranberry makes it so festive!
This recipe has 3 simple steps and to make things even easier can even be made in advance to give you one less thing to do on the big day!
What you’ll need;
25g dried cranberries
1 tbsp red wine
125g cooked Puy lentils
2 tsp olive oil
½ onion, finely chopped
½ garlic clove, crushed or finely grated
1 tbsp chopped sage
½ tbsp chopped parsley
¼ tsp smoked paprika
pinch ground cloves
1 tsp tomato purée
1 tsp soy sauce
1 tsp cornflour
What you’ll need to do;
- Turn on the oven to 200C/180C fan/gas 6 and let it heat whilst you start to prep everything else. Get your oil and baking paper and starting with the oil then the paper line a 200ml ovenproof ramekin. Next, add the cranberries and wine to a pan and cook on a medium heat until the mixture becomes syrupy then add this mixture to the lined ramekin.
- In a bowl, roughly mash half of the lentils. Add the olive oil to a pan, heat and then cook the onions until softened then add in the garlic, herbs, paprika and cloves and cook for a minute. Take the mixture from the heat and add the lentils, tomato purée, soy and cornflour, mixing everything together. Once well mixed it will be ready to add to the ramekin, spoon it in and press down gently with the back of the spoon.
- You can keep it in the fridge for up to two days and when you’re ready to cook it just pop the ramekin on a baking tray and pop in the oven for 15 minutes!
